Every year on March 20, Odisha comes alive with the fragrance of one of its most beloved and iconic dishes β€” Pakhala. From humble village homes to five-star hotels, from Bhubaneswar restaurants to Odia communities in Singapore, Malaysia, and Bangladesh β€” the whole world joins Odisha in celebrating World Pakhala Divas.

But 2026 was no ordinary Pakhala Divas. This year, the Odisha Tourism Department made history by entering the Guinness World Records β€” serving a staggering 1,174 kg of Pakhala in a single vessel to over 2,000 people from underprivileged communities. Chief Minister Mohan Charan Majhi himself attended the grand Pakhala Parba at Panthanivas in Bhubaneswar, calling Pakhala "the aroma of our soil and the pride of our traditions."

Chief Minister Majhi, who attended the celebration along with Assembly Speaker Surama Padhy, Deputy Chief Ministers, and senior officials, was deeply moved while speaking about Pakhala. Hailing from a tribal family, he shared his personal childhood connection to the dish, saying: "It is not only the food of the poor, but also the favourite of Lord Jagannath."

Making Pakhala is beautifully simple β€” here is the traditional method followed in Odia households for generations:

🍚 Traditional Basi Pakhala Recipe

Cook rice: Cook plain white rice (preferably a short-grain Odia variety) until just done β€” not too soft, not too hard. Let it cool completely.

Soak in water: Transfer the cooled rice to a clay pot or vessel. Add enough fresh water to completely submerge the rice β€” approximately 3–4 cups of water per cup of rice.

Ferment overnight: Cover the vessel and leave it at room temperature overnight for 6–8 hours. The rice will ferment naturally, developing a mild, pleasant sourness and rich probiotic content.
